Honeycrisp is a moderately vigorous tree with a somewhat spreading growth habit.
Honeycrisp apples are oblate to roundly oblate in shape and 2-3/4 to 3-1/2 inches (7 to 9 centimeters) in diameter.
Honeycrisp was produced from a 1960 cross of Macoun and Honeygold, as part of the University of Minnesota apple breeding program to develop winter hardy cultivars with high fruit quality.

Honeycrisp™ (Malus domestica 'Honeycrisp') is a modern cultivar of apple developed in Minnesota by the University of Minnesota Twin Cities at its Horticultural Research Center.
The Honeycrisp also keeps for a long time in cool, dry conditions and retains its pigment well.
However, genetic fingerprinting by a group of researchers including the inventors listed on the patent has determined that neither of these cultivars is a parent of the Honeycrisp, but that the Keepsake (another apple developed by the same UMN crossbreeding program) is one of the parents.

Unfortunately, there is no proven explanation why the Honeycrisp 'yellows' occurs, although several 'theories' have been put forth, including: potato leafhopper injury; nitrogen deficiency; latent virus from propagating stock; and carbohydrate partitioning.
Fortunately, most agree it is not a serious problem, and growers are continuing to plant Honeycrisp to capitalize on it's remarkable fruit quality and marketability.
Researchers, however, are continuing to study the problem hoping that indeed it is as benign as it appears.
