Cocoa powder is made when chocolate liquor is pressed to remove three quarters of its cocoa butter.

There are two types of unsweetened cocoa powder: natural and Dutch-processed and it is best to use the type specified in the recipe as the leavening agent used is dependent on the type of cocoa powder.

In addition, excessive local taxation of cocoa, barriers to selling directly to exporters of cocoa by local governments, a lack of a communications infrastructure to broadcast cocoa market prices in up-country regions, and civil unrest and violence are all factors that can constrain the price farmers receive for their cocoa.
