The parking brake ridge may be keeping the rotor from coming off, but you should still be able to wiggle the rotor around.
The brake pads will stay with the caliper mounting bracket, this is OK. Rest the caliper on something, or hang it from the frame with a length of wire.
Be sure the cap is off the underhood brake reservoir, and the bleeder valve is open and is ready to squirt into the drip pan (you may want to attach a drain tube to the valve).

Front brakes on this car are very easy to work on and require a minimum of tools, the only tools that you may need that you may not have are a four to six inch c-clamp and about four feet of rubber vacuum hose (for bleeding the brakes, more on that later).
This should push the brake pads flat against the rotors (verify that they are both flat against the rotor and that they have not slipped out of place), the brakes should feel solid and not squishy, if they are still squishy, check for leaks, fix them then bleed the brakes again.
As brake wear occurs at the rear brakes it will take a longer pull on the lever to activate the parking brake, eventually the brakes will wear to the point where the parking brake is almost useless.

Since the inboard side friction surface is thus well lubricated, it provides almost no braking action, and all braking from the rear has to come from the outboard side of each rotor.
Owners having performed this upgrade have reported the brakes seem to work better when cold (there would be no change if oil on the friction surfaces wasn't an issue), and there is evidence that cars with vented rotors do not demonstrate the unequal brake pad wear that is so common on cars with solid rotors.

I've been told it's somewhat normal, shouldn't happen, the brakes are self-destructing, and recently you wrote that it's a sign the brakes are OK but might soon need to be replaced.
Brake pads are allowed to float slightly within the caliper's grasp, to allow uniform rotor contact, although movement is regulated by springy clips or isolator pads.
The inboard brake pad might wear at a greater rate, so it's best to sneak an inspection mirror into position to view it as well.

Such rotors are an established technology, and are a workable method of upgrading the XJ rear brakes to vented rotors.
In this next picture, a differential output shaft flange shim C33440 was placed on the inboard side of the rotor assembly to illustrate the clearance.
The holes provide access to the two bolts that hold the brake calipers to the Dana differential, and are invaluable for removing the OEM one-piece rotor -- but they're merely a nicety on the two-piece rotor, since you can separate the disc from the hub to gain access to the bolts.

On an inboard brake Jaguar, it is always better to toss rear pads with a bit of lining left than to replace one's rear rotors.
Additionally, rear brake pad replacement, and the requirement to push the caliper pistons back to allow insertion of the thicker new pads, will frequently cause brake fluid leaks to occur even if the calipers were sealing before.
Because most disc brake system do not have positive pad retraction mechanisms to pull the pads away from the rotors after brake applications, this can cause the brakes pads to drag lightly on the rotors resulting in excessive wear and rotor overheating.

 How To: Install Rear Disc Brakes on Gen2 F-Body
If your car's rear axle brake line junction is mounted to the differential cover bolts and you are using the OEM rear disc hard lines (or repops of them), you will need to weld a tab to the axle housing and relocate the brake line junction.
If you are installing new hard lines, remove the drum brake hard lines from their retaining clips on the axle and install the new ones, starting the installation at the Tee junction with the flexible hose.
Using parking brake actuator arm for the passenger side caliper, rotate the parking brake screw in the apply direction until both pads contact the rotor.

When you pull the brake lever, a cam moves both the outboard pad to the right and the inboard half of the caliper body (which houses the inboard brake pad) to the left—in effect, squeezing the rotor simultaneously from both sides.
IRD calls this model the “Dual Banger” because the brake does, in fact, sandwich the rotor, but the way it accomplishes this is very different from what you may have encountered with hydraulic, dual- piston brakes.
Since the brake pads wear quickly, the next logical question is “Can you actually find replacement pads for these things?” The good news is that the Dual Bangers use the same pads as Shimano’s Deore Mechanical discs, so replacements are readily available.

Turn the caliper pistons clockwise and make sure the grove on the piston is lined up with the slot on the caliper(otherwise the inboard brake pad will not fit).
It is always a wise thing to lube the backs of the pads with brake stop and to bleed your brake system after every brake job.
Also for all of you who did not know, brake fluid is also used in the ABS system(you would be surprised how many cars I get in that didnt know.

I too asked the question of how to service the brakes when burried in the arches but most people dont seem to have a problem and with the GD the whole body comes off anyway (by the way Im going to build a GD and Ive already got the axle and it has inboard discs).
Inboard discs are undoubtedly difficult to get at but they shouldn't need much maintenance so it's not much of a problem in my opinion.
The reason why inboard discs are used is because they happen to be on one of the very best suspension setups available; the series 2 Jag.
