Bolding and italicizing were specifically mentioned in Page and Brin's original paper that led to Google.
Matt Cutts has recently stated that and are treated exactly the same way that and are, and that certainly implies that they are treated in some particular way.
For myself, I use Heading tags and bold face and italics (or strong and emphasis) for normal markup reasons anyway.

I realize sometimes it cannot be avoided, but I try to restrain italics to when a character would be emphasizing a word or words in his speech, and even then I think it can be driven around.
I do thoughts without italicizing too, but that's more as a general feeling; when they are thinking exactly that, I italicize.
Italicizing for emphazing shouldn't be used too much; if it is, it just proves that the author is unsure of his writing and that he can't convey what he wants to.
