The arbuscules enter individual root cells from intercellular hyphae, then branch dichotomously and repeatedly so that most of the cell volume is filled with finely branched AM hyphae, providing a large area of interface for potential nutrient exchange between the fungus and its plant host.

Jack Root / George Gardner - OOTP Developments Forums
George Gardner - In addition to his 2-1-1 record against Root, he also split 2 fights with welterweight Joe Walcott, had a win and a draw against Marvin Hart, a loss and a draw to Jim Flynn (at the end of his career), a loss to Jack Johnson, and a loss to Bob Fitzsimmons.
The one thing you might want to do is maybe bump Root's HP up a bit (but lower something else to compensate.) He has a bunch of 6-round decisions on his record, and I suspect that hurts his KO% - if he'd been fighting 10-rounders, he'd have collected a few more knockouts.
Maybe Jim can let us see ratings for these (I refuse to believe they will not be included again), and other archive fighters not included in TF2001.
