Wine - Open Encyclopedia   (Site not responding. Last check: 2007-10-08)
Historically, wines have been known by names reflecting their origin, and sometimes style: Bordeaux, Rioja, Mosel and Chianti are all effectively trade names, reflecting the most popular wines produced by the named region.
Wines may also be classified by vinification methods: sparkling, still, fortified, rosé, blush, etc. The colour of wine is determined by the presence or absence of the grape skin during fermentation, since most wine grapes have clear juice.
Many wine writers have decried the trend, as it has pushed up prices to the point that few people will consider drinking such valuable commodities, and consequently they are kept in bottles undrunk where they eventually deteriorate into a substance very much like red wine vinegar in taste (and desirability).

Beverage and Food Dynamics-Sept '98 - SIZE MATTERS
Starting in the early 1980s, the statisticians who chart the course of the wine industry in America said that jug wines would soon be surpassed by "premium wines," and that would signal the maturation, the sophistication, of the American wine consumer.
You may be forgiven if you have a bit of a negative attitude toward jug wine because for decades it was looked down upon as a simple, uninteresting quaffing wine that people bought to sip with a meal and never discussed.
The various categories of wine have often been segmented on the basis of price, not on the size of the bottles in which the wine is sold, said John Fredrikson, president of Gomberg, Fredrikson and Associates, a San Francisco-based statistical analysis and consulting company.

 MetroActive Dining | Jug Wines
JUG WINES, ALAS, have a reputation only a skosh above former Clinton adviser Dick Morris' (I mean, he is pond scum), a dismal condition I attribute to three important factors: 1.
If the wine industry wants more people to enjoy more wine with more meals (and it surely does), then the way to do it is by producing more and better low-cost jugs, not more and better $20-a-bottle-and-up wines for the elite.
Unfortunately, because jug wines are made from juice that no one wants for something better, and because the wine industry right now is beset with a juice shortage, the quality of jug wines at the moment is, frankly, as low as it's ever been.

The wines are made from Tempranillo and other grapes, are often aged in oak, and trace some heritage to Bordeaux, from where many wine makers emigrated after the phylloxera scourge of the mid-19th Century.
The wine comes in many styles, depending largely on canopy management or leaf pruning (shaded grapes make a "green," "grassy" style while grapes exposed to sunlight make a characteristically citric style) and whether the wine maker chooses to age the wine in oak.
