As we finished our karasumi, Hiro slapped 3 extremely fresh, thrashing shrimp down on his preparation block.
Then he pinned the tail to the (former) middle with a toothpick, and they became part of a wonderful soup, served in a tiny kettle with a miniature shot glass as the bowl.
