  Recipe: KATSUDON
It's stretching this a bit to include as a soup, but after reading the climactic scene about Katsudon in Banana Yoshimoto's Kitchen, I just had to have it.
She says: "This katsudon, encountered almost by accident, was made with unusual skill, I must say.
"Katsudon o kudasai?" I say--"Could you give me katsudon?" He emphatically crosses his arms in front of him: "Iie, iie katsudon"--"No, no katsudon!" I pursue the conversation, making a dumbshow of wanting to find it somewhere in town.

I have always thought only deep-fried pork cutlet (tonkatsu) was used in katsudon but I have seen quite a lot of Japanese restaurant here serving chicken katsudon.

Katsudon seems to be most common in American Japanese restaurants, although most often I see both it and Oyakodon labeled as simply Donburi.
BON, the katsudon I have had always have the tonkatsu sliced and laid neatly atop the rice with sauce drizzled over top.
I think it is such a waste to deep-fry something and then cover it (or even simmer it!) in a sauce, thus ruining the crunch.

A common lunch dish, it generally consists of a generous portion of rice topped with meat, seafood, or vegetable and broth.
For a different meal idea, serve pork cutlets (step 1, 2, and 3) with Japanese hot mustard, tonkatsu sauce, or a slice of lemon with thinly sliced cabbage and hot rice on the side.
