I don't know if we should take the Vorta's word on them going insane and killing each other from lack of white.
If Goran'Agar is any example, it would seem they kill each other in order to grant a more honorable death to their comrades, rather then let them die the slow dragged out death that lack of white would bring.
This might seem insane to a Vorta, as they have been shown to underestimate and fail to understand the Jem'hadar.

All Jem'Hadar except Goran'Agar have a Ketracel-White [KW] icon, a stylized white "K".
Without a supply of Ketracel-White, in the form of an Equipment card of that name, Jem'Hadar with a [KW] icon will go into a battle frenzy if either player has the White Deprivation incident in play, attacking anyone in sight and eventually dying from white deprivation and battle injuries.
The [KW] icon is also a special staffing icon for the Dominion Battleship, allowing your [KW] personnel to report aboard that ship if you have Crew Reassignment in play.

Like all countdown icon cards, at the end of the countdown, a Ketracel-White card self-nullifies and is discarded.
This Equipment card still counts down if present with a [KW] personnel at the end of your turn, even if the White Deprivation incident is not in play.
It prevents White Deprivation from affecting [KW] personnel.
