L’aperitif de choix these days often seems to be a kir…or better yet a kirroyale, mixed with champagne instead of white wine to bring the level of elegance (and the price) up a few notches.
Third, kir isn’t a centuries-old cocktail…it was invented in the 1940s by the mayor of Dijon (whose name was M. Kir) in an attempt to remedy flagging cassis sales.
The original Kir was a mixture of high quality crème de cassis and Burgundian aligoté, a particular white wine of that region.

Her name is Salehurst KirRoyale or 'Kir' for short.
She is by the Welsh Section B Stallion The Hale Valentine (by Carolinas Purple Emperor ex Varndell Vanity) from the Bluebury and Manhattan Stud based in Dorset, out of a riding pony mare called Salehurst Spritzer (by Bingham's Bivouac ex Garth Maraschino).
In 2003 Kir was unshown due to her visit to stud.
