  CATHOLIC ENCYCLOPEDIA: Kneeling and Genuflection
The practice of kneeling during the Consecration was introduced during the Middle Ages, and is in relation with the Elevation which originated in the same period.
There are, nevertheless, certain liturgical prayers to kneel during which is obligatory, the reason being that kneeling is the posture especially appropriate to the supplications of penitents, and is a characteristic attitude of humble entreaty in general.
This has given occasion to the Missal rubric, requiring the clergy and by implication the laity, to kneel in Lent, on vigils, ember-days, etc., while the celebrant recites the collects and post-communions of the Mass, and during the whole of the Canon, that is, from the Sanctus to the Agnus Dei.

Kneeling - Wikipedia, the free encyclopedia
Kneeling is a human position in which the weight is distributed on the knees and feet on a surface close to horizontal.
The position of kneeling may be assumed for practical reasons and for reasons of social or religious custom.
Socially, kneeling, similarly to bowing, is associated with submission and obeisance, particularly if one kneels before a standing person: the kneeling position renders a person defenseless and unable to flee.

Kneeling for Holy Communion - Responses from Congregation for Divine Worship in Notitiae
In 2002, the USA Bishops released a decree stating that the norm for reception of Holy Communion was standing.
In fact, as His Eminence, Cardinal Joseph Ratzinger has recently emphasized, the practice of kneeling for Holy Communion has in its favor a centuries-old tradition, and it is a particularly expressive sign of adoration, completely appropriate in light of the true, real and substantial presence of Our Lord Jesus Christ under the consecrated species.
To this end, it is perhaps useful to respond to your inquiry by repeating the content of a letter that the Congregation recently addressed to a Bishop in the United States of America from whose Diocese a number of pertinent letters had been received.

And so they said that kneeling was unworthy of a free man, unsuitable for the culture of Greece, something the barbarians went in for.
It may well be that kneeling is alien to modern culture — insofar as it is a culture, for this culture has turned away from the faith and no longer knows the one before whom kneeling is the right, indeed the intrinsically necessary gesture.
Where it has been lost, kneeling must be rediscovered, so that, in our prayer, we remain in fellowship with the apostles and martyrs, in fellowship with the whole cosmos, indeed in union with Jesus Christ Himself.

Quarterback kneel - Wikipedia, the free encyclopedia
In American football, a quarterback kneel, also called taking a knee, occurs when the quarterback immediately kneels to the ground after receiving the snap.
It is primarily used to run the clock down, either at the end of the first half or the game itself, in order to preserve a lead or a win.
Defenders have also pointed out that the quarterback kneel allows a team that has overwhelmingly defeated an opponent who could have no realistic chance of winning the game in its final minutes to be merciful and not be accused of running up the score, or at least a star player's statistics.

People generally do kneel, although the point during the prayer at which people kneel is not uniform as it is in the U.S. Kneeling, obviously, is still a universal gesture of reverence.
To this it may be responded: a) the people were entirely separated from the sanctuary; b) the near-millenial tradition in the West is to kneel during the consecration; and, c) it is liturgically and anthropologically indefensible to make such a change in such a central tradition.
But if the change of substance hasn't occurred by the end of the institution narrative, then the Church in the liturgy which is a norm of her belief has been not only encouraging but positively legislating idolatry: the adoration of not-yet-consecrated bread.

Holy See: People May Kneel After They Receive Holy Communion
In the dioceses of the United States of America, they should kneel beginning after the singing or recitation of the Sanctus until after the Amen of the Eucharistic Prayer, except when prevented on occasion by reasons of health, lack of space, the large number of people present, or some other good reason.
With a view to a uniformity in gestures and postures during one and the same celebration, the faithful should follow the directions which the deacon, lay minister, or priest gives according to whatever is indicated in the Missal.
This sentence does not appear in the GIRM as adapted for the United States, however, since this period of kneeling is explicitly affirmed in the US version of no. 43, that is, "unless the Diocesan Bishop determines otherwise".
