Korokke (Japanese: コロッケ) is a Japanese deep fried dish originally related to a French dish, croquette.
Korokke is made by mixing cooked chopped meat, seafood, or vegetables with mashed potato or white sauce, rolling it in wheat flour, eggs, and breadcrumbs, then deep frying this until brown on the outside.
Korokke is often served with tonkatsu sauce and shredded cabbage.

i make a korokke that is spinach and parmesan, potato-based of course, and if i have it, i add tiny chopped up pieces of prosciutto to the mix before chilling and shaping.
Some people incorporate a bit of an egg yolk into their korokke base, but I find this usually less than helpful.
The only rule I follow with korokke is to keep the meat/veg to half or less the weight of potatoes/pumpkin used - more than that, and they tend to be soggy or fragile.

Yes, korokke are Korean (not Japanese) croquettes, essentially consisting of mashed potato (and corn, and carrot, and pea) paste, breaded, and then fried hard in tempura oil.
I usually put some plain and nasty shredded mozzarella atop my korokke and then leave it to bake in the toaster oven while I tend to my soba.
