Not all cameras have spot metering so the only way to get a very accurate reading of the subject itself is to use a light meter right at the subject.
The metering in the camera is not always totally accurate, since it measures reflected light, which in turn depends on the subject brightness.
The meter you are refering to, an incedence meter, the one you hold just in front of the subject, measures the light falling on the subject, rather than the light reflected back.

Window light can be very flattering on your subject, but as you suggested, it is not always easy to work with.
An incident meter reads the light that falls on the subject (normally you read at the subject and aim the dome toward the camera), as opposed to a reflective ready, like those built into cameras that reads the like that reflects off the subject from the camera position.
Now, with side light, if you read the full light that falls on the subject by aiming it toward the window you probably will get under exposures, because it is not taking into account the shadow side that is seen from the camera.

if you have a spot meter use that to meter on almost anything that's in the same light as what you're trying to shoot that isn't snow.
the light reflecting off the snow is very bright and because of that your camera wants to close the apature or use a fast shutter speed to compensate.
the rest of your scene that the flash dose not cover may or may not be under exposed depending on the difference in stops between the light of the flash and the natural light in the background.

There is also a second method on one of the old meter websites that involves pointing the meter at the north sky and calibrating to an EV reading.
But they are about the only old light meters that seem to continue to work.

I wasn't aware of the camera's lack of light metering capability on AIS lens before changing from a manual camera to an auto camera.
Without TTL metering you lose a lot of the things that make the F80 interesting, and it doesn't sound like you're about to change your old lenses anytime soon.
Built in meters have not replaced hand held meters rather both are used side by side by knowledgeable photographers.
