The title "Limey" actually comes from the fact that Wilson is British, and during the war, British soldiers were given limes to to eat to get their daily dosage of vitamins.
Artisan Entertainment has been releasing "The Limey" in 16x9 enhanced widescreen presentation on this DVD that restores the film’s original theatrical 1.85:1 aspect ratio.

Just so, The Limey's generic storyline is not as important as the film's disruption of and insight into the conventions of story telling itself, into the whole nature of time and the self that tells these tales.
In The Limey, from the very beginning we don't know whether Stamp's Wilson, an aging ex-con from London in LA on a mission of revenge, is coming or going.
Without Stamp, though, The Limey would be just a juicier neo noir with a twist -- his presence makes Soderbergh's free-associative fragmentation seem not so much like editing-room pyrotechnics as the tormented workings of a mind torn by loss, rage, desire, and the imponderables of time.

Re the comment of Pat Moore on the derivation of 'LIMEY' Essentially this is correct that limes were used to prevent scurvy on some british ships.
The reason it is considered a slur is that originally lemons were used on long voyages to prevent scurvy, but some ship owners thought that this was too expensive and so substituted CHEAPER limes which basically worked though perhaps not as effectively.
So someone ' I think possibly of French origin', wishing to slight or disparage the British called them 'LIMEYS', as a mild insult implying that the British were more concerned with profit that the well-being and health of the seamen.

"The Limey" is a fascinating film about a complex British ex-con coming to America to investigate his daughter's death — for the first half-hour, anyway, before it turns ordinary and distant.
"The Limey" is at its absolute best when it's in reflective mode though, with close-ups of Wilson sitting on a plane, thinking, or standing outside a wrought-iron gate, his head cocked to one side with a cigarette dangling out one corner of his mouth, thinking.
Peter Fonda, playing Valentine, is nicely centered in the unlikeable role of the affluent, weak, and shady L.A. businessman, but perhaps as strong is the performance of Luis Guzm·n (you probably don't know the name but you'll recognize the face), who appears as another friend of Jenny's who serves as Wilson's tour guide.
