In the South of Mordor below the gap made by the spurs of Ered Lithui and Ephel Dúath the area seemed to have been at least to some degree fertile.
This was the "slave-worked fields" of Lithlad providing food for the army of Mordor.
As i understand it Lithlad were a part, the part around the North and East-shores of Sea of Nurnen, of Núrn.

In the middle of the land were the Sea of Nurnen and by the shores of this sea were "the slave-worked land" Lithlad.
The Sea of Nurnen, not the Sea of Lithlad.

There were a number of roads in Mordor that were used by Sauron's servants.
