However, when the packet is moving to google that MTU may actually change by another device (such as a VPN) and drop the MTU to 1300.

Now this tech guy told me that the problem is that my MTU settings on the router (1500 default) should be set to 1492.
I haven't tried setting MTU on either the router or the Airport basestation (which is configured in "bridge" mode) but I haven't experienced a problem in sending email from the other computers (connected directly to the router).
As I indicated it is sporadic and the 3 other Macs on the network experience the same effect at the same time which leads me to believe that the problem lies more on their side of the fence.
