Macaroni and cheese - Wikipedia, the free encyclopedia
Macaroni and cheese (sometimes referred to as macaroni cheese in the U.K. or mac'n'cheese in the U.S.) is a common dish, similar to the British dish cauliflower cheese, whose main ingredients are cooked macaroni (often termed elbow macaroni in the US) and a cheese sauce.
Cheddar cheese is the traditional choice (or cheddar-like processed cheese).
Boxed versions (the stove top method) of the macaroni dish are known for the rich yellow-orange color, resulting from the use of powdered "cheese sauce mix" rather than actual cheese.

 Macaroni and Cheese
In most recipes, cooked macaroni is baked with one of two kinds of cheese-flavored sauce, either béchamel, which is a basic white sauce made from butter, flour, and milk, or custard, which comprises eggs with milk or cream.
For those who prefer their macaroni and cheese served out of a baking dish and browned on top, this version is based on the stovetop version above, but it is broiled just long enough to brown the crumb topping.
The macaroni and cheese can be made up to eight hours ahead, but it must be reheated over very low heat, adding extra milk to moisten it, if necessary, before pouring into the baking dish.

Gross mac and cheese from the NYT. - By Sara Dickerman - Slate Magazine
(Kraft was probably trying to evoke something similar when it renamed the dish "cheese and macaroni" in the 1980s.) But Moskin's recipe has odd proportions: a whopping 24 ounces of cheese to a pound of pasta, with just a drizzling of milk to moisten the casserole.
Moskin offers up the tantalizing possibility that delicious macaroni and cheese can be made without white sauce, or béchamel, the butter/flour/milk goop that binds pasta and cheddar together in a traditional mac and cheese.
Neither "Crusty Macaroni and Cheese" nor "Creamy Macaroni and Cheese" (the less popular companion recipe) requires white sauce.
