The Maiar did not really have sexes, since they did not have innate physical forms, but they are generally referred to as either male or female, and some of them did take spouses, usually from among the other Maiar (though Melian wed an Elf).
Ilmarë;: she is the handmaiden of Varda, and one of the greatest of the Maiar, though little is said of her.

The best known Maiar spirits are Gandalf (belonging to the people of Manwë and Varda), Saruman and Sauron (belonging to the people of Aulë.
Taking physical shape like these Maiar they were able to walk among other creatures unknown of their true origin but could be slain.

A maiar in my head is a lesser being that is Ainur and came to Arda to serve the Valar.
Maiar such as Gandalf, Sauron and Saruman, (when they were in Valinor), by contrast doesnt have animal instincts but are "pure" beings of spirit, in the "Maiar" category of Ainur.
Maiar and Valar were "civilised", pure beings of Spiritual energy, highly intelligent and sentient mind, compared to the third spirit group that wore the shape of animals or beasts, lived according to how animals do, were independant except on requests of assistance, and yet intelligent and sentient.

I think he probably would have had some Maiar under his teaching, had he not turned to evil so quickly and got himself kicked out of the ranks of the Valar.
I always thought that the Balrogs were originally the Maiar "assigned" to Melkor, with Gothmog of course being the greatest of these.
I'm not sure if the Maiar were 'assigned' to the Valar or if they simply chose which Vala they wished to learn from.

But ultimately he was defeated but his underling servant, Sauron the Maiar, survived and went into hiding until the Valar left again for the western most part of the world.
When that body is destroyed, if the Maiar wants to again have a body it must expend its spiritual energy to do it.
No one really knows what the deal is with them.  One was named Radigast the Brown who makes only a brief appearance in the book and the other two are referred to as the "blue wizards" and just went off into the east never to be seen again.

The only Maiar to openly arrive to Middle-earth during the Third Age were the Istari, five wizards, most notable being Gandalf and Saruman.
Since the first time their leaders were brought to Valinor, they have been studying magical powers from the Valar and the Maiar, mostly those concerned with artifact creation (the Noldor) or the coexistence with nature (the Sindar).

They were associated with fire which could probably have something to do with the element of Earth and forging (Aulë) but their connection to Aulë(or to any other Vala for that matter) is nowhere stated.
You may have answered partially answered your own question in your second post.It was probably his power and majesty that drew those Maiar that would follow him.
The Valarauker(or demons of power)did not seem to follow any Valar in particular.It is probable(indeed likely),that Arien-previously in the service of Vana,was of the same spirit of fire as the Balrog's.

A Balrog were Maiar Demons (which include the likes of the winged beast of the Nazgul and werewolves).
To be specific, it says "Maiar who rebelled with Melkor, after Sauron the mightiest and most terrible of his servants".
Sauron, the Istari, and all Balrogs are Maiar.

As to Sauron, he was an extremely powerful Maiar, but again I question his status as the greatest of the Maiar.
This doesn't prove he was weaker than Gandalf, but if he stood as the undeniably most powerful of the Maiar, he should have feared no one other than the Valar themselves.
