The 8BITMIME extension was introduced to allow transmission of mail without the need for these encodings but many mail transport agents still don't support it fully, possibly due to the complication of having to do content transformations when forwarding to a mailserver that doesn't support it.
Users download their messages from servers usually with either the POP or IMAP protocols, yet in a large corporate environment users are likely to use some proprietary protocol such as Lotus Notes or Microsoft Exchange Server's.
Mails can be stored either on the client or on the server side.

Headers give the name and electronic mail address of the sender and recipient(s), the time and date when it was sent and a subject.
It is then passed to some kind of "Message Transfer Agent" (MTA) - a program which is responsible for either delivering the message locally or passing it to another MTA, often on another host.
The message is eventually delivered to the recipient's mailbox - normally a file on his computer - from where he can read it using a mail reading program (which may or may not be the same MUA as used by the sender).

This is a local copy of the MIT cgiemail user guide that corresponds to the version (1.6) we use at UWM.
Asynchronous mail is sent more efficiently and reliably, but has the disadvantage that problems can only be reported by mailing an error message back to the sender.
To the mail system, it appears that the sender of the mail is the web server, so the error message won't get to you.

Wietse's Postfix Project is an interesting alternative to sendmail, because it is supposed to be quite compatible and fast as well as secure.
However, it doesn't have the abilities of sendmail to route e-mail between different types of mail systems (except for the built-in SMTP and UUCP).
Nevertheless, it makes very nice summaries of the mail logs, and can be useful for system administrators that are tired of poring through sendmail's copious logs trying to figure out how well their mail server configuration is holding up.
