Makizushi means 'rolled sushi' and it is thin strips of fish and vegetables rolled in sushi rice and crisp sheets of seaweed, and then sliced into bite-sized rounds.
Makizushi is a particular favorite among sushi neophytes; in fact, it is most people's introduction to sushi, and it is easy for a beginner to like.
Ura makizushi is also known as an inside out roll, it is covered in toasted sesame seeds instead of the usual nori.

The Makisu (Japanese: 巻す) is a mat made of long bamboo strips weaved together with a cotton string used in the preparation and presentation of Japanese food.
The main use of the mat is to make makizushi (rolled sushi), but the mat may also be used to shape other soft materials as for example an omelets and to squeeze out excess liquid.
Similar to the zaru, the mats should be allowed to dry well after use and stored in a dry to extend the lifespan of the tool and to avoid the growth of bacteria and fungi on the mat.

Actually they were uramaki rolls which are a type of makizushi.
California rolls are also a type of makizushi called futomaki.
The main difference is that uramaki has rice on the outside while the futomaki and other forms of makizushi have the rice inside the nori (seaweed).

Ino-san's rice is perfect, his fish is always fresh from varied sources, and his wife is one the nicest Okinawan ladies I've ever met (this includes my relatives).
Very fresh, but also very traditional stuff, nothing fancy.
If you only like makizushi prepare for disappoinment.
