As explained in “Lesson from the Orchard,” maraschino cherries begin as a fresh harvested cherry.
Shortly after harvest, the cherries are placed in a brine solution made of water, sodium metabisulfite, citric acid and calcium chloride.
This occurs in large processing vats where a constant stream of cold water rinses the brine from the cherry, and then corn syrup and red food color (FDandC 40) are slowly added.

The modern maraschino cherry was first invented just prior to Prohibition, and since prohibition prevented the previously common brandied cherry from being easily obtainable, the artificially colored, and artificially flavored maraschino cherry took hold and flourished.
To make a modern maraschino cherry they basically soak perfectly good "Royal Ann" cherries in a lye mixture in order to drain them of all color and all flavor, and then marinate them in a sugar syrup that is flavored with almond (usually artificial) as well as a brilliant red artificial color.
In the late 1800's, marasca cherries macerated in maraschino liqueur became a delicacy among affluent Europeans and, from there, made the leap to fine hotels and restaurants in America.
