Topic: Marmalade

Marmalade - Wikipedia, the free encyclopedia
Marmalade is a sweet conserve made from fruit, sugar, and (usually) a gelling agent.
The extension of "marmalade" in the English language to refer to citrus fruits was made in the 17th century, when citrus first began to be plentiful enough in England for the usage to become common.
The truth is that in 1797, James Keiller, who was unmarried at the time, and his mother Janet opened a factory to produce "Dundee Marmalade", that is marmalade containing thick chunks of orange rind, this recipe (probably invented by his mother) being a new twist on the already well-known fruit preserve of orange marmalade.

The title refers to a simile Miki uses early in the series to describe Yuu: she calls him a "marmalade boy" because he has both a bitter side and a sweet side, but his appearance fools people into overlooking that.

Recipe for Orange Marmalade   (Site not responding. Last check: 2007-11-06)
Orange marmalade is made with a special kind of orange, traditionally known here in Britain as "Seville Oranges": they appear on the market in late January each year and are available only for a couple of weeks.
So long as the screw-top is tightened while the marmalade is still good and hot, any mould spores which might have got in will be killed by the heat, and the screw-top will seal and form its own vacuum as it cools: modern screw-tops have a dimple which pops out again if the vacuum fails.
Or marmalade tarts; orange sauce for duck, or a sweeter version as a sauce for desserts; marmalade ice-cream; plenty of other uses in the recipe books where, by the time it's served, no-one will be able to tell that it wasn't set.
