 First World War.com - Who's Who - Max Immelmann
Max Immelmann (1883-1916) was Germany's first air ace of the First World War, scoring seventeen victories until his death in 1916.
Immelmann was actually born in South Africa but chose to renounce his British nationality while studying medicine in Germany.
Such was the shock of his death (which was at first attributed to other causes) that Kaiser Wilhelm II grounded his fellow airman (and rival) Oswald Boelcke for a month to avoid the loss of two aces in short order.

Max Immelmann developed a tactical manoeuvre which gave him a possibility to attack "out of the sun", so that his opponent only saw him when Immelmann already fired his gun.
But today Max Immelmann will be remembered in this as the first pilot to made it possible to attack more than once in quick sequences.

Max's real turn consisted of a steep climb with a tight flat turn at the top (near stall speed) to dive down the same direction he had just come.
Max's brother, and others, maintained that the synchronizer gear had failed and that Max shot off his own propeller, causing violent vibrations that shook apart his Fokker.

 FokE3
The Immelmann Turn, the process of climbing and half-looping to make another attack pass, was named for Max Immelmann, though it's unclear if he actually devised the technique himself.
Immelmann would be killed in combat on June 18, 1916, apparently when his synchronization gear malfunctioned, shooting off just one of the propellers.
It appears that the true Immelmann maneuver is as follows: once you make a diving attack on the enemy and start to overshoot, pull back on the stick and begin to climb into a loop, while applying some aileron to position your enemy to your side.

The Immelmann carries the name of the pilot credited with its invention: Max Immelmann, a German WW I flyer.
Although there is some question whether aircraft of his era had the horsepower and agility needed to actually perform the maneuver as a perfect half loop, it is certain that some version of this unique method of getting turned around found merit with early fighter pilots.
Immelmanns belong in the "interrupted loop" series, along with Half Cubans, Cuban Eights and 3/4 loops.

Blue Max? - Wehrmacht-Awards.com Militaria Forums
I once read that its nickname came from the fighter pilot Max Immelmann (the first pilot, together with Oswald Bölcke, that was awarded with the PLM).
Another possibility is that Max simply meant "Maximum," as it was the highest strictly military award of the Prussian state.
I think Tim is on the right track here, since during the war some heavy guns had the nickname "Langer Max", the max meaning maximal, or German for "the biggest", or "the best".
