Berry sings about chasing Maybellene in his V8 Ford while she drag races a man in a Cadillac with her Coupe de Ville.
According to Berry, Maybellene was the name of a cow in child's nursery rhyme.
Maybellene is the name of a cosmetics manufacturer but i doubt that it has much to do with the song.

His legal troubles did not end there as he was convicted in 1961 of violating the Mann Act (bringing an underage girl across state lines for immoral purposes) and in 1979 of income tax evasion.
It also was symbolic of the negative practice of the '50s that had people in promotion and disc jockeys being named as co-publishers in order to get in on royalties.
The hits continued and as Berry's writing, playing and vocal style evolved so did his popularity among the youth of the '50s and later musicians, too, as many of his songs were covered by others, including the Beatles and the Rolling Stones.

On May 21, 1955, the song, now renamed "Maybellene," was recorded with Willie Dixon on bass; immediately, Chess gave a copy of the record to the influential disc jockey Alan Freed, who aired the single for two hours straight one night on his show on WINS in New York.
The copyright for "Maybellene" contained the names of Alan Freed and Russ Fratto as well as Berry's; while Freed's name on the song ensured airplay, it also reduced Berry's royalty payments.
Learning from these initial pitfalls, Berry realized that self-sufficiency and independence were keys to long term survival in the business, and from this point on, he became determined to take charge of his own affairs, sowing the seeds for the later allegations of his being difficult to work with.

A few years after Richards heard “Maybellene,” his band, the Rolling Stones, launched their recording career with a cover of Chuck Berry's “Come On.” It took the Stones years to work off the influence and darken their palette, building on Berry's sound.
Ostensibly a song about a faithless woman, it is also, explicitly, about a race between a Ford and a Cadillac, a guitar played through an amp that sounds like it's about to burn, and just behind that, a boogie-woogie piano in orbit.
To do that, one really needs to hear them back-to-back with the numbers they were jostling from the hit parade, plodding white covers of fl artists' songs, like Georgia Gibbs' “Dance With Me Henry” and Pat Boone's “Ain't That A Shame.” Berry and Johnson swept the charts like Drano through a clog.

He didn't invent the genre (Bill Haley's "Rock Around The Clock" came out a year before Berry's 1955 "Maybellene"), but he showed there was more to it than just reckless abandon - spinning a series of catchy, clever youth anthems that inspired generations of rockers.
Keith Richards put together an all-star concert for Berry's 60th birthday, and a film and soundtrack LP followed.
The set list is predictable - "Johnny B. Goode," "Maybellene," etc. - and the band is precise, but not too exciting: Richards is inaudible on rhythm guitar.
