The technique varies slightly - the mbege of Kilimanjaro involves actually cooking the bananas, and relies more on grain than does the tonto or mwenge of Uganda - but all basically involve squashing bananas to extract the juice.
In the past bananas would normally have been peeled when ripened, and this is still done with mbege; but bananas for tonto are now generally not peeled, and are trodden with the feet, rather than being squeezed by hand.
The mixture of banana juice and grain is left to ferment, either in a gourd or in a wooden trough.

The ‘mbege' is added as one part to 12 parts of the brew while one part of the ‘msesewe' is added to 40 parts of the brew.
Bananas are harvested and placed over the fireplace or in the ceiling of traditional Chagga huts where the temperature is high enough to speed the ripening.
The filtrate is left for some hours prior to the inoculation with malted millet (‘mbege') flour, hence its name ‘mbege'.

Kgosi Tumelo Seboko presided over a case in which Lesetedinyana Lesetedi had filed an appeal arguing that his cousin Tshepo Mbege Mosieyane, 25, was not entitled to any inheritance from the late Bafi Mbege’s estate because he was an illegitimate son from a relationship between the deceased and Mosetsanagape Mosienyane.
Mbege died in 2004 and his son could not attend his funeral as he could not afford to buy an air ticket from America to Botswana.
Kgosi Seboko said it was disappointing for Lesetedi and his relatives who claim to have loved their uncle to come and claim that Mbege died without a child.

Shakparo Ale and Mbege Ale are being sold in bottles at independent liquor stores and at Sprecher's Glendale brewery.
Sprecher doesn't do that with Shakparo and Mbege, but employs special yeasts, like those used in Belgian fruit beers, that "kind of do their own thing when they're in the beer," he said.
Shakparo is a West African type beer, while Mbege is like beers popular in East Africa, especially in northern Tanzania, according to Sprecher.
