First of all, Chablis with a capital C must come from its namesake region in France, which is in northern Burgundy.
The primary grape grown in Chablis is chardonnay, but the region also makes its white and red wines from pinot noir, pinot blanc, pinot gris, pinot liebault, sauvignon blanc, gamay, cesar, tressot, sacy, aligote and melon de Bourgogne, according to The Sotheby’s New Wine Encyclopedia.
Traditionally, Chablis is a clear, pale color with a green tinge around the rim, a steely, direct, high-acid wine that takes several years to soften.

Known better as Muscadet, its region of production in the western Loire close to Nantes, Melon is synonymous with the rather neutral, acidic dry white Loire Valley wine which reached its zenith in the late 1970s and early 1980s.
It's grown in small quantities in California's Napa Valley and is currently viewed in parts of Australia, notably the Riverland, as a variety with the potential to produce premium reds.
Meaning Blood of Jove, or Jupiter, Sangiovese is the Chianti grape par excellence, and responsible in Tuscany too, for Brunello di Montalcino and Vino Nobilo de Montpulciano.

This winegrape was brought to America in 1939 by Georges de Latour and was established at Beaulieu Vineyards (BV) in California.
BV labelled the wine from this grape as simply "Chablis", however they refered to the grape interchangably as both Melon de Bourgogne and Pinot Blanc.
At this writing we know of but three examples of this wine from American producers (labelled as Melon de Bourgogne); Panther Creek, Eugene Wine Cellars and Elemental Cellars, all from Oregon State.
