During the milling, or grinding, phase, the wheat is reduced to flour.
Mahlon's new mill was a custom mill, grinding not only wheat grown on his own land but also providing services for other farmers settling around "Janney's Mill." A sawmill operated adjacent to the large grist mill at various times during the 19th century, providing lumber for buildings.
The mill operated from the late 1790s to the 1850s and is significant for its use as a woolen mill and manufactory.

The History of Flour Milling in Early America
Early milling centers of America was New York (first by the Dutch and then later because of Rochester and the Erie Canal), Wilmington (along the Brandywine River), Baltimore (along the Patapsco River), Georgetown (along the C and O Canal), Richmond (on the James River and the Kanawha Canal).
The mills that we saw that were constructed in the 1700's before the improvements of Oliver Evans, they still had their characteristics of a pre-Oliver Evans mill with the millstones feeding to meal boxes, lighter staffs to tenter the millstones, and a sack hoist.
The mills missed a stage in the development of flour milling and remained the same until the introduction of the roller milling process and the desire by the American household for Minneapolis style flour.

A pebble Mill is any Mill in which flint pebbles or porcelain balls are used as the grinding media, and the inside of the cylinder is lined with either porcelain, burrstone, rubber, or some other non-metallic lines.
During discharging, the grinding cover is not disturbed and, consequently, any unground material that lodges in the open space between the manhole frame and cover cannot fall onto the finished batch.
Some grinding does occur between the shell and the grinding media, but this action is considerably less than that which accompanies the rolling, cascading, sliding, and relative motion in the center of the charge which occurs when the correct angle of break is maintained.

At a certain point, controlled by the Mill speed, the load nearest the wall of the cylinder breaks free and it is so quickly followed by other sections in the top curves as to form a cascading, sliding stream containing several layers of balls separated by material of varying thickness.
It is also known that the grinding action in a larger Mill is more severe than in the smaller sizes and, consequently, we are of the opinion that the angle of break should be lower for the larger Mills than for the smaller.
A general rule in determining the grinding efficiency for different size batches is to figure that a 40% batch takes twice as long as the 25% and the 60% batch four times as long when a 50% charge of grinding media is used.

 Ball Mills
A Ball Mill grinds material by rotating a cylinder with steel grinding balls, causing the balls to fall back into the cylinder and onto the material to be ground.
The point where the mill becomes a centrifuge is called the "Critical Speed", and ball mills usually operate at 65% to 75% of the critical speed.
Ball Mills are generally used to grind material 1/4 inch and finer, down to the particle size of 20 to 75 microns.

There are 3 shear points that subject material to a higher degree of grinding than conventional mills.
Undispersed material is forced into a cavity formed by a spinning Rotor and fixed Stator; centrifugal force propels the material to the outside of the Rotor, causing intense hydraulic shear that breaks agglomerates and homogenizes the solids and liquids.
This mill is used extensively for validation trials, re-formulation test work in the lab, and process development.
