Minestrone - Wikipedia, the free encyclopedia
Minestrone is an Italian soup made with fresh seasonal vegetables, often with the addition of pasta or rice.
The word minestrone is likely pre-roman - its latin name points to its origins and function: minestrone is derived from "minus" or minor, and the modern suffix "-one", which indicates largeness (eg cat "gatto" + "one" = gattone = huge cat).
Minestrone originally was a very humble dish - again being made primarily with left-overs - and more or less was intended for an everyday consumption with the idea of being filling, cheap and good, as opposed to being made for a special occassion such as marriage or a celebration.

Minestrone, which means "big soup" in Italian, is a universal dish, served and appreciated equally from store-bought tin cans and top restaurants.
In Italy, minestrone also symbolizes two things: the arrival of spring and the generosity associated with Joseph, the Catholic patron saint of fathers, carpenters, and self-doubters.
Once, in the true spirit of the day, she made it in a rented efficiency unit at a Hollywood, Fla., motel, and served it to all the guests gathered in the courtyard.

 Summer Minestrone
Minestre are more often soups Italians consider a first course although, with their rice or pasta, they, too, may be such hearty fare we would declare them a satisfying meal unto themselves.
This "Minestrone Verde" includes summer's tender green peas, zucchini and spinach, as well as the leeks, potatoes and canned tomatoes traditionally used in winter.
Summer is blisteringly hot in much of Italy, so this minestrone is often made in the cool of the morning, to serve at room temperature at mid-day.
