A Mokugyo (in Japanese language) (木魚, Chn: mùyú), commonly known as a Wooden Fish, is a wooden percussion instrument used by monks ordained in the Mahayana Buddhist tradition.
The Mokugyo is mainly used by Buddhist disciples in China, Japan and Korea.
One is the well-known Mokugyo that is round in shape with scales carved on it.

Reb said that when you first start out at Zen Center they give you the mokugyo to play, the special drum that keeps the beat when we are chanting.
After you learn to play the mokugyo while "being upright", that is balancing in the center of caring just the right amount, then you get more responsibilities, for example being doan which involves a complex number of bells and careful timings during service.
Playing the mokugyo, it is relatively easy for me to relax, but maintain focus and do it well.

I found that, in almost every reference to the Four Vows, the words "resolve" or "resolute" were utilized, bringing the sense of determination and purpose and perseverance to the forefront.
This brought to mind my first instruction for striking the mokugyo - the tone for the Four Great Vows would be one of solemn resolve, slow and even and strong.
I take note that, in more recent times, the pace has picked up somewhat, but the tone still remains strong and resolute.

From this experience I can understand what your priest acquaintence is talking about.
I feel that people like to chant rapidly because its easier for them to keep in rhythym together, if you aren't using a mokusho or mokugyo (wood drums) or something else for that purpose.
Another thing that I have found enjoyable is the rhythym pattern used in Shodaigyo.
