A covenant is a contract, and a covenant with God is a contract directly with God.
If a religion conflicts with a covenant with God, then it is the religion which is wrong, and not the covenant.
This covenant is binding not only on the people who made it, but also on their descendants in perpetuity (or at least until this point in time).

Also, it is my contention that a new covenant does not cancel an old covenant as evidenced by the fact that no subsequent covenants have cancelled the Noahic covenant, for instance.
You might also pursue the line of reasoning that the 'new covenant' spoken of in Jeremiah is with the house of Judah and the house of Israel, and is not like the covenant with THEIR forefathers.
Though for attaining a fuller walk in the Mosaic law I see no role for a 'new covenant' (assuming there is and sould be a role for a 'new covenant') since this could as also be obtained through moving from the Noahdic covenant into a process of proselyting.

The Gentile simply had to follow the basic rules of the Noachide covenant- do not kill, do not commit adultery, etc., and they would be found acceptable to God.
Prior to Jesus, the Jews were under the law, and the Gentiles were under the Noachide covenant.
Salvation was already available to all in the OT by following God's laws- the Law was specific for the Hebrews, his people, and the basic Noachide laws for the gentiles.

Please know that it is the word "Rosh" which means to "make afresh." We celebrate Rosh Chodesh which is not a "new" moon, because it is the same old moon.

Understand that this incident of Paul's deviation from Covenant stipulations to the Gentiles precipitated the Acts 15 Council where James made his ruling that the non-Jews were to be taught the Covenant of Noah along with its laws for inclusion into the Israel of G-d and all this was done long after Yeshua's death.
