The head is the distinctive breed characteristic, with the facial profile between the eyes and the muzzle being strongly concave.
The Nubian should have the angularity and smoothness of the other breeds; it will have a tendency to more fleshiness, especially in the withers and thighs, and more slope to the rump due to slightly higher hip bones, which may also give the topline a slope downward to the withers.
Nubian ears, instead of being short, narrow and alert, will be wide, flat, flared forward at the ends and pendulous.

Meat Goat Breeding Stock   (Site not responding. Last check: 2007-10-25)
Many of the goats traditionally raised for meat in the US are either dairy goat offspring sold as a byproduct of the dairy goat industry or animals extensively raised as brush control animals.
Over the last twenty years more and more goat producers have begun selecting their animals exclusively for meat production by selectively breeding for traits such as heavy muscling and out of season breeding or by crossbreeding to produce offspring that are more suitable for meat production than either parent.
For example, the smaller-framed Spanish goat has been crossed with Nubians to get the larger size and fleshiness of the Nubian while retaining some of the hardiness of the Spanish goat and Alpines have been crossed with Nubians to combine the large birth weights and milking ability of Alpines with the carcass qualities of Nubians.

In this study, the effects of goat milk obtained from two dairy farms with different breeds of goats at various stages of lactation on yield, composition, sensory scores, and fatty acids of soft cheese (Chevré) were evaluated.
While the sensory scores of Alpine goat milk cheese varied throughout lactation, those of Nubian goat milk cheese were virtually the same regardless of stage of lactation.
In conclusion, if a dairy goat herd is raised to supply milk for cheesemaking, Nubian goats or a mixed herd with at least some Nubian goats will be advantageous to cheese makers for a higher premium for their higher cheese-yield milk.
