Old ale - Wikipedia, the free encyclopedia
Old ale, also called stock ale or, archaically, keeping ale, is a style of English beer with a high specific gravity, aged for at least a year and usually ranging from 4% to 12% alcohol by volume.
Historically, old ales served as a complement to mild ales, and in pubs of the era typically the landlord would serve the customer a blend of the sharper stock ale with the fruitier, sweeter mild ale to the customer's taste.
Old ales are most often bottle-conditioned and as such should be stored upright in a cold dark place and poured gently so as not to allow the bottle's yeast into the glass.

 Old Ales
The forerunners of old ale may be the last of the modern styles to utilize some of the common practices that pre-porter brewers used a century and a half before.
Old ale was also called such because of a lingering preference for aged beer, even though by the late 19th century, the brewer's craft had been refined enough to ensure a constant supply of clean, fresh beer.
Some old ales are amber in hue, in which case the pale malt may be augmented for color and body with a measure of crystal malt.

 Old Ale - Beer Expert
Old Ales are rich and warming with an unmistakable aged flavor.
Old Ale's name originated centuries ago because it was a mild ale that was aged a year or more before drinking.
It was the mixture of expensive old ale with inexpensive mild that became the basis for the porter style.

 Beer Styles: Old Ale
During aging, the old ales of a century ago developed an acidic flavor component from the action of bacteria and wild yeast.
But perhaps the most notable of authentic old ales is Galeâs Prize Old Ale, a 9.5 percent ABV beer that is aged for a full year at the brewery before distribution.

OLD is lightly hopped giving the ale a smooth transition from malty beginning to a bitter clean finish.

Michael Jackson's Beer Hunter - Apples and black treacle in a real winter warmer
There are several contenders, but none with quite the dry, sappy, apples-and-fl-treacle fruitiness of Gale's Prize Old Ale With the clocks back and winter looming, now is the time to consider beers that are not only sustaining but also strong, to warm the chest and soothe the over-indulged stomach.
Most old ales are dark, though they tend toward a treacle-toffee dryness rather than the rosary "burnt" character of a porter or stout, or the more syrupy, liqueur-ish fullness of a barley wine.
All ale yeasts (as opposed to the lager family of strains) produce fruity flavours, and these are accentuated in strong beers.

 Anchor Steam - Old Foghorn
Barleywine Style Ale is brewed strictly according to traditional brewing methods, using only natural ingredients — water, malted barley, fresh whole hops, and yeast.
Because of the high original gravity, the yeast is unable to ferment all of the sugars.
Old Foghorn also has a pleasant hop bitterness, due to the large quantity of hops used during brewing, and a unique hop aroma due to the dry-hopping and aging.

McSorley's Old Ale House - Wikipedia, the free encyclopedia
McSorley's is the oldest Irish tavern in New York City, located at 15 E. 7th St. in the East Village.
The aged artwork, newspaper articles covering the walls, the sawdust floors and the Irish waiters and bartenders help give McSorley's Old Ale House a truly old school "Loisaida" flavor.
Prior to the 1970 Supreme Court ruling, the motto was "Good Ale, Raw Onions and No Ladies." The raw onions can still be had as part of the famous McSorley's cheese platter.

 BYO - Old Ales
Old Peculier is a dark, moderately strong, lightly hopped, full-bodied beer, considered by some to be a classic old ale.
The important point about this is that Hardy Ale was presented as a beer of distinction, as a result of which it gradually achieved cult status among Englandâs beer-drinkers.
The result is that although old ales are only produced in limited quantities, and there are only a relatively small number of commercial versions, there are enough for us to define the style.

 Old Ale - CAMRA
Old Ale recalls the type of beer brewed before the Industrial Revolution, stored for months or even years in unlined wooden vessels known as tuns.
Old Ales, contrary to expectation, do not have to be especially strong: they can be no more than 4% alcohol, though the Gale’s and O’Hanlon’s versions are considerably stronger.
Neither do they have to be dark: Old Ale can be pale and burst with lush sappy malt, tart fruit and spicy hop notes.

Overall Impression: An ale of significant alcoholic strength, bigger than strong bitters and brown porters, though usually not as strong or rich as barleywine.
History: A traditional English ale style, mashed at higher temperatures than strong ales to reduce attenuation, then aged at the brewery after primary fermentation (similar to the process used for historical porters).
Hop variety is not as important, as the relative balance and aging process negate much of the varietal character.
