Later it became associated with Persephone who guided the souls of the dead to the underworld and was used to decorate the tombs and graves of the dead, in hopes of pleasing her.
The Romans would tuck sprigs of parsley in their togas for protection and may have been the first ones to adorn their plates with said sprigs, only it wasn't for decoration but rather was to protect against food contamination.

Upon its release PARSLEY, SAGE, ROSEMARY and THYME was regarded as a landmark recording; time, however, has taken a toll.
In the wake of the many artists Simon and Garfunkle inspired, their mixture of folk-rock and electronics no longer seems as fresh as it once did, and the album is beset by two youthfully pretentious songs and a number of cuts that have become distinctly dated.
Final thought: for all it's charms, this is not really the recording I would use to introduce a newcomer to Simon and Garfunkle; those unfamilar with their work would do better to select a "Greatest Hits" compilation.
