Pauillac is a small village and port on the Gironde estuary, famed for producing some of the finest and longest-lasting red wine in the world.
Administratively, Pauillac is a commune of the Gironde département.
The village boasts a mere 3000 acres (12 km²) of vineyards in the Haut-Médoc between the villages of Saint-Julien to the south and Saint-Estèphe to the north, yet has the unique distinction of being home to three of Bordeaux's five first growth wines: Château Lafite-Rothschild, Château Latour, and Château Mouton-Rothschild.

One of the top Pauillacs of the vintage, the 2004 Pichon Longueville Baron exhibits an opaque ruby/purple color along with a big, rich nose of smoked meats, licorice, flberries, currants, and notions of tar and truffles.
A complex, fragrant bouquet of fennel, fl currants, sweet cherries, licorice, and sweet oak (about 50% new oak is utilized) is followed by a medium-bodied Pauillac exhibiting excellent concentration, elegance, and acidity as well as a nicely textured mouthfeel without being anywhere near the size or opulence of the 2003.

Just three more wines to add today from the most regal commune of "Pauillac" and to my regret many of the wines had scandalously run dry by the time I reached it.
On a more positive note, Chateau Pontet-Canet is now producing a wine that ranks alongside the more illustrious names in Pauillac and considering their modest prices, I cannot recommend this undervalued wine highly enough.
The palate is concentrated and tannic, well-structured, masculine with notes of mulberry and cassis.

Although the wine kept opening up with time, it never showed as well as the classic Pauillacs I'm used to.
Tasted by Keith Levenberg on 3/1/2005 and rated 91 points: Classic Pauillac, with cedar and coffee notes, dense, full-bodied, gushing red fruit, and a plush mouthfeel that keeps the tannins civilized.
