Paul Heathcote, once of Le Manoir aux Quat' Saisons, now has five restaurants, three in Liverpool, Manchester and Leeds, and two in his home town of Preston.
Heathcote arrived on the Liverpool dining scene in April 2001, opening what seems to have become a popular restaurant very near to the waterfront.
In the kitchen, however, it is not Paul Heathcote, who is more likely to be globetrotting in search of a new house wine, but rather Andy McGuinness.

Owner and celebrity chef, Paul Heathcote, decided it was time for a change to coincide with the restaurant's 10th birthday in May 2005.
Heathcotes opened on Winckley Square in 1995 and then a further £400,000 was invested on the neighbouring Olive Press in 2002.
Paul, who was named Lancashire Director of the Year earlier this year, said: "When we opened Heathcotes, it was very new and cutting edge and it still looks very modern but it's 10 years old and, in that way, a little bit out of date.

Despite the room’s apparent neatness, the walls are plastered with Mr Casey’s work: self-portraits, abstract line drawings, etchings, prints and large murals being painted for the Heathcote Fire Brigade’s centenary.
Pointing to an abstract painting, Mr Casey said the piece was “trying to show the form and weight of the figure without too much work.” He told the ABC’s Claire Gorman he was planning to start showing abstract work (although most people were not aware he worked in the genre).

Had someone introduced me to Heathcote's food and explained that, much in the same spirit as our own Alice Waters, he champions native ingredients and elemental preparations updated by reasonable contemporary twists, I would no doubt have been a convert to the British -- or at least Lancastrian -- table.
Each section (the book is divided into each of the four seasons) is broken up by short, colorful biographies on the local folk who supply Heathcote's Restaurant, and each chapter also features an essay or two that transports you to Heathcote's native Lancaster.
As Heathcote puts it, "too many chefs want to cook what's in fashion, and every restaurant you go to has a similar kind of feel to it," so he turned to English cooking to be different.

 'Burglar' rescued from behind bars
Police, ambulance and fire crews were called to Simply Heathcotes in Manchester after a 21-year-old man was spotted stuck behind railings in the cellar.
He told fire crews he had been locked in by bouncers but it is suspected he had entered the cellar area via the barrel chute with the intention of breaking into the restaurant.
The restaurant is owned by former TV chef Paul Heathcote, once a protege of Raymond Blanc.
