A pavlova has a marshmellow centre and a hard but brittle outer shell that melts in the mouth.
well "Meringue" are known in each european country, Pavlova on the other hand is unknown except that the Meringue on a Lemon Meringue tart is similar.
Apparently if food colour is added the marshmellow inner goes the colour of the dye while the shell remains white; will try this sometime and see.

 New Zealand Food Guide Book - Pavlova
This pavlova has a slightly crisp outside and is like marshmallow on the inside.
To serve: Sliced Kiwifruit (peaches, strawberries or whatever) atop whipped cream (250ml of cream per pavlova), with icing sugar being added to the cream during whipping to ones own taste (I put about 0.5 cups in).
I hope this works for you as it does for me, the recipe is over sixty years old and is in the Aunt Daisy Cook Book the N.Z. cooks bible.

According to the Australian claim, it was invented in 1935 by Herbert Sachse, an Australian chef, and named by Harry Narin of the Esplanade Hotel, Perth, after Anna Pavlova, the Russian ballerina who visited both countries in 1926.
The West Australian chef, Herbert Sachse, claimed to have invented it in 1935, a statement whcih has been thoroughly researched by Michael Symons...New Zealand does not acknowledge a single creator, but was certainly using the name pavlova and making large soft-centred meringues before 1935.
The built-up sides of the pavlova are said to suggest a tutu.
