Puddings, on the other hand, and I mean true puddings, are always thickened by the gelatinization of starch.
Now rice pudding should never, ever be made with converted rice or boil-in-the-bag rice because those rices have been processed in order to remove some of the free starch.
Now to augment the texture of this pudding, we are going to steal 1 small trick from the custard world and beat 1 egg yolk with about a third of a cup of sugar.

According to etymologists, the term was taken from Latin and adopted into English as the singular term "pease." as in pease pudding below.
However, by analogy with other plurals ending in "-s", speakers began construing "pease" as a plural and constructing the singular form by dropping the "s", giving us the term "pea".

The "pease porridge" most of us know from the old nursery rhyme was most likely a simple boiled pudding of pease meal.
Puddings in all their variety and glory may thus be seen as the multiple descendants of a Roman sausage.
With the advent of the pudding boiled in a cloth, pease were given similar treatment, being packed into a pudding-cloth or bag, simmered in water or broth, and turned out as a solid mass that was sliced and eaten with bacon or pickled pork.

The origins of this rhyme are unknown; it takes its name from a type of porridge made from peas, pease pudding, also known as pease pottage (in Middle English, "pease" was treated as a mass noun, similar to "oatmeal" and it is from that we get the singular pea and plural peas).
Where the terms "pease pudding" and "pease pottage" are used, the lyrics of the rhyme are altered accordingly.
