Texas Monthly: Read Me. Texas   (Site not responding. Last check: 2007-11-01)
Texas settlers looked around them and saw, on the banks of almost every river and stream, pecan groves that seemed to stretch into infinity.
In 1981 the Texas harvest was 62 million pounds (almost a fifth of the national total) and had a value of $42 million.
And though the industry is clearly going in the direction of scientifically managed groves that produce big, voluptuous pecans, for now the bulk of the state’s output still comes from great trees like the ones that were here when our forefathers rattled up in mule-drawn wagons 150 years ago.

 Commercial Pecan Orchards In Texas
Texas averages 60,000,000 pounds of pecans annually, equally divided between natives and improved varieties from planted orchards.
Pecans require 2 inches of water per week once in production, so water volume and the cost of delivering the water need to be considered when determining the size of an orchard.
Pecan families need to write a production plan each year before growth begins so everyone understands what needs to be accomplished including when, how, and by whom.

 Texas Native Pecans
Native pecans are a weak economic crop when compared to planted orchards because of alternate bearing, small nut size, low percentage of kernel, and traditionally low market price.
Texas native pecan wood is dark colored with numerous markings, which is atypical in the national hardwood trade; however, this does not rule out a market for handmade paneling, furniture, and floors.
Most managed native pecan groves average 500 pounds of nuts per acre per year, though this is usually 1,000 pounds one year and none the next.

 Organic Pecans - LocalHarvest
Pecans, one of the better known hickories, are the only nut trees native to North America, and are originally from the lower regions of the Mississippi valley, Georgia, Kansas, and central Texas.
One of the finest nuts in texture and flavor, pecans stored in the freezer will retain their quality or long, but care must be taken as they will readily absorb odors from other foods next to them.
Pecans from wild trees, some people feel, are sweeter and have a higher oil content than the paper shell varieties, but this is open to discussion.

Voss estimates the damage will cost him $30,000 a year in pecan sales for each of the next 15 years, until the 500 to 600 new trees he plans to plant at $25 to $30 apiece could be harvest-ready.
Voss' pecans make up a fairly small part of the total production in the United States, which produces more than 80 percent of the world's pecan supply.
Over the years, the Vosses amassed about $100,000 worth of pecan- harvesting machinery - much of it bought used - and became pros at the routine: A mechanical "tree shaker" uses its rubber-padded arms to rattle each tree for a couple of seconds, dislodging the nuts.
