Casu marzu - Wikipedia, the free encyclopedia
Casu marzu (also called casu modde or formaggio marcio) is a cheese found in Sardinia, Italy, notable for being riddled with live insect larvae.
Derived from Pecorino Sardo, casu marzu goes beyond typical fermentation to a stage most would consider to be decomposition, brought about by the digestive action of the larvae of the cheese fly, Piophila casei.
Piophila casei larvae can pass through the stomach alive (human stomach acids do not usually kill them) and take up residency for some period of time in the intestines, where they can cause serious lesions as they attempt to bore through the intestinal walls.

Includes: Piophila casei (L.) (Cheese hopper, Cheese maggot, Cheese skipper [En]; Mouche du fromage [Fr]; Käsefliege [Ge]; Mosca del queso [Sp]).
For example, although infestation by blowfly larvae is reduced at temperatures in excess of 45°C, complete kill requires 20 h at such temperatures: Piophila casei is particularly tolerant of high temperatures: in experiments, all larvae survived 1 h at 52°C and 24 h at 45°C (Smart, 1935).
The larvae of several of the species can cause myiasis in man or livestock: i.e., they may infect surface wounds, or they may be ingested and continue to develop as parasites in the intestine.

Casu Modde Cheese with Piophila Casei Maggots   (Site not responding. Last check: 2007-10-30)
The Cheese Skipper, Piophila casei, has a worldwide distribution and is named after the behaviour of its maggots.
When disturbed the larvae flex and release their bodies, skipping up to 15 cm (6 inches) into the air.
In Sardinia, Italy, Piophila casei larvae are deliberately introduced to pecorino cheese, promoting an advanced level of fermentation and breaking down the cheese's fats.

Determination of Postmortem Interval by Arthropod Succession: A Case Study from the Hawaiian Islands. Goff ML, Flynn MM ...   (Site not responding. Last check: 2007-10-30)
Abstract: A postmortem interval of 34 to 36 days was established for remains recovered on the island of Oahu, Hawaii, based on interpretations of patterns of arthropod succession on the remains.
This interval was primarily based on the presence of adult specimens of Philonthus longicornis (family Staphylinidae), mature larvae of Piophila casei (family Piophilidae), and empty puparial cases of Chrysomya rufifacies (family Calliphoridae).
Species and developmental stages of two additional Coleoptera species and three additional Diptera species were also present, which was consistent with the estimated interval, although not definitive.

 Casu modde cheese
Casu modde cheese (also called casu marzu or, in italian, formaggio marcio) is a special fermented cheese typical of Sardinia, Italy.
Derived from Pecorino, its fermentation is brought up to quite a decomposition by the development of the larva of the Piophila casei, a small insect.
Its pasta becomes very soft and some liquid comes out ("lagrima" = tear).
