FLAT-FISH (Pleuronectidae), the name common to all those fishes which swim on their side, as the halibut, turbot, brill, plaice, flounder, sole, andc.
The side which is turned towards the bottom, and in some kinds is the right, in others the left, is generally colourless, and called "blind," from the absence of an eye on this side.

Both, as flatfishes, have the eyes and colour on one side of the body, and both, as members of the family Pleuronectidae, usually have these features on the right side.
Other edible flatfishes known as halibut include the Greenland halibut, also of the family Pleuronectidae, and the California halibut, of the family Bothidae.
The California halibut (Paralichthys californicus) is found along the California coast and is gray brown with a maximum length of about 1.5 metres and weight of 27 kilograms.

Rightly or wrongly I have put both of these fish together in this section.
I say this as they are from different families, the Dover sole coming from the family Soleidae as is the sand sole whereas the Lemon sole is from the same family as the plaice the halibut the dab and the flounder (pleuronectidae).
One will however substitute the other in most recipes for sole.
