Restaurants stockpile popular pierogi for Polish Fest   (Site not responding. Last check: 2007-10-13)
Pierogi, those plump, delicious little dumplings found at the annual Polish Fest celebration, are bestsellers every year because they're too much work to make at home, said Andrew Wasielewski, one of the vendors who toils to make thousands of pierogi each June for the festival, set for Friday through Sunday at the Summerfest grounds.
At Polish Fest, however, there is an abundance of traditional ethnic cuisine at stands scattered throughout the grounds.
Although the Polish Fest vendors would not share their recipes, we did find this basic pierogi recipe and a version of bigos, or hunters' stew, from "The Art of Polish Cooking" by Alina Zeranska (Pelican Publishing Co., 1989, $14.95).
