In Valentine's election there had been no contest, but it is noted that the nobles like the clergy, took part in the affair.

Valentine's Day originates from the ancient Roman fertility festival of Lupercalia, which was celebrated on 15 February in honour of the gods Lupercus and Faunus, as well as the legendary founders of Rome, Romulus and Remus.
Valentine was caught on 14 February and dragged to jail.

Thus, the switch to St. Valentine's, Valentine being the name of several people in history who were (seemingly) martyred for doing various saint-like things, such as illegally marrying Roman soldiers to their girlfriends.
Pope Galasius I was the one to name it Valentine's, in honor of the saint.
I'm unsure regarding the credulity of these "facts", but it appears as though aforementioned Bishop Valentine (the one who broke the law to marry the soldiers to their girlfriends) fell in love with the jailer's daughter while he was in prison awaiting the removal of his head by means of an axe.
