 020. Benzoate, sodium (FAO Nutrition Meetings Report Series 40abc)
Biological Data The biological data on benzoic acid and sodium benzoate as given in the Sixth Report of the Joint FAO/WHO Expert Committee on Food Additives (FAO/WHO, 1962) are, relevant for the evaluation of potassium benzoate.
Evaluation There is no reason to believe that potassium benzoate differs toxicologically from benzoic acid and sodium benzoate when these are used as food additives.
The estimated acceptable daily intakes of benzoic acid and its sodium salt for man given in the Sixth Report are therefore considered applicable to the potassium salt.

 Sodium benzoate Summary
Sodium benzoate is the sodium salt of benzoic acid.
Benzoic acid is highly toxic to microbes however, it is less effective against molds.
Sodium benzoate is effective only in acidic conditions (pH < 3.6) making its use most prevalent in foods such as preserves, salad dressings (vinegar), carbonated drinks (carbon dioxide), jams (citric acid), fruit juices (citric acid), and chinese food sauces (soy, mustard, and duck).

Lumen Foods: Sodium Benzoate   (Site not responding. Last check: )
Sodium benzoate is freely found in nature, and in fact, even organically grown cranberries or prunes can contain levels of benzoic acid that exceed the legal limit imposed by the FDA on U.S. food manufacturers (0.1% by weight), although the level normally found in berries will be in the range of 0.05 to 0.1%.
Sodium benzoic, as well as benzoic acid are completely SAFE, and like the preservative, potassium sorbate (sorbic acid), have been labelled SAFE by the leading food additive authority, Dr. Michael Jacobsen, founder and president of Center for Science in the Public Interest.
Because commercial sodium benzoate is today made in laboratories, it has sometimes been banned by certain entities in the health food industry, there is no scientific basis for any claim that benzoate is unhealthful.

 Nature's Flavors : Potassium Sorbate (25% Solution) in Distilled Water (Vegan,Gluten free,Kosher, 100% Pure, Artificial ...
When using potassium sorbate as a preservative, use twice as much acid as preservative in the finished product.  Acid contributes to the effectiveness of the sodium benzoate.  Citrus fruits have naturally high levels of acids or commercial citric acid can also be used.  Potassium sorbate will function effectively at levels of 0.1% or below.
A simple formula for 25% potassium sorbate solution: Measure 1 level and packed cup of potassium sorbate and add 3 cups of warm water.  Stir until completely dissolved.  Pour into a clean quart or gallon container.  With these conditions the shelf life should be indefinitely.
Potassium sorbate can be used in conjunction with sodium benzoate for optimal preservative performance.  Potassium sorbate, citric acid, and a 25% sodium benzoate solution can also be purchased in a combination solution.

 Benzene in Beverages
The FDA and industry initiated research and discovered that exposure to heat and light can stimulate the formation of low levels of benzene in some beverages that contain both benzoate salts, such as sodium benzoate or potassium benzoate, and vitamin C (ascorbic acid).
Sodium benzoate or potassium benzoate may be added to beverages to prevent the growth of bacteria, yeasts, and molds.
Benzoate salts also are naturally present in some fruits and their juices, such as cranberries.

Two major conclusions were reached in the study: (1) The levels of benzene found in foods and beverages are not a threat to public health, and (2) Benzene is ubiquitous in virtually all foods.
