Louis Post-Dispatch food critic Joe Bonwich[1], Provel cheese was invented expressly for St. Louis-style pizza more than a half-century ago by a defunct St. Louis firm called Costa Grocery (now Roma Grocery in the Hill neighborhood of St. Louis), in conjunction with a Wisconsin cheese company named Hoffman (now part of Kraft Foods).
Bonwich says that Provel was originally developed to meet perceived demand for a pizza cheese with a "clean bite" - one that melts well but still breaks off nicely when you bite into it.
Neither of Bonwich's sources at Kraft and Roma had a definitive answer for the origin of the name, although one popular theory is that it's a combination of the words provolone and mozzarella, two of the cheeses for which it is substituted.

As I've written before, I don't mind Provel "cheese" on an occasional St. Louis-style pizza, the purpose for which it was invented more than a half-century ago by a long-gone downtown firm called Costa Grocery, in conjunction with a similarly departed Wisconsin cheese company named Hoffman.
And if you don't like Provel, certainly you could pick it off of the bountiful antipasto tray, which for just $6.95 features it along with razor-thin slices of prosciutto, a half-dozen slices each of salami and mortadella, fl and pimento-stuffed green olives and even several slices of anchovy.
The pollo Asiago managed to avoid the Provel, although it was otherwise very close to the vitello bianco, complete with the prosciutto, mushrooms and white-wine-and-lemon-butter sauce, in complementary flavorings.

It's quite similar to Provel, but has a small tad of muenster in addition to swiss, provolone, and cheddar.
It is technically, as is Provel, a processed cheese product, so it does have some technical resemblance to Velveeta--in fact, Provel is made by Hoffco Cheese Co, which is Kraft owned, so Provel and Velveeta are distant cousins at least.

It is thin crust with provel cheese and cut in squares.
I personally do not like the pizza, the provel cheese is really gooey and sticks to the roof of your mouth.
The difference was that we used an even mix of provel, american and mozzarella cheese and didn‘t add sugar to our sauce.

Note the Provel people are very rude and you can expect conflicting information regarding a timeframe resolution.
