While quiche is widely considered a French dish, it is interesting to note that - at the time of its creation - the region of Alsace-Lorraine was a German provinve called Lothringen.
Quiche - presumably because of it often contained vegetables - was suddenly considered an unmanly dish.
By strict defintion, a quiche is a pastry shell filled with a savory custard made of eggs, cream, seasonings and various other ingredients.

I got an urge for quiche last week and thought it was a great opportunity to take advantage of local suppliers in support of the Eat Local Challenge.
The only local cheese available is a cheddar that's not very good, but my friend, Q Correll, makes the lightest quiche I've ever eaten using imported Cheshire and I thought it would be particularly good with the smoked bacon.
As I said, the Cheshire makes a surprisingly light quiche and the smoked bacon was, indeed, an excellent match.

I can't stand eggs if they are hard-boiled, fried, poached (worst of all), etc. The eggs in quiche are diluted and made more palatable by cream and seasonings, I suppose.
I probably would never have even tried quiche (because of my dislike for eggs) but my dad had planned to make quiche to bring to some family gathering and he got sick so I made it instead.
