Redshirt is a term used by fans and staff of Star Trek to refer first to the characters who wear red Starfleet uniforms, and secondly to refer to those characters which are expendable, and quite often killed off, sometimes in great numbers.
As noted, the Wrath of Khan losses were all redshirts, but the TNG losses were more varied, but continued their pattern of conn officer attrition.
However, the first known redshirt death on DS9 came when an unnamed officer was killed in ops by the Cardassian counter-insurgency program.

Redshirts are a plot device used to indicate the dangerous circumstances faced by the main characters at the start of a narrative without having to kill any of the vital main characters.
The redshirt distinction was made more prominent by the fact that the only main characters who wore red were Chief Engineer Montgomery Scott and Communications Officer Lt. Uhura; since there were no regular characters in the security department, the appearance of any such character in an episode was strongly suggestive.
The Redshirts in question are sold for use as cannon-fodder and expendable manpower in situations too dangerous for your average crew member.

I would say the main reason to razz the redshirts is they are the low guys on the pole.
The redshirts in the series are always the ones to die.
I don't really have much of a problem with redshirts, except when they stand uncomfortably close behind you when you are trying to decide what to buy.
