Samphire, or rock samphire (Crithmum maritimum), the sole species of the genus Crithmum, is an edible wild plant found in coastal regions of mainland Britain.
To prepare it for the table, samphire is trimmed of its hard root, washed and plunged into boiling water for a few minutes.
The flavour is highly reminiscent of asparagus, and samphire is sometimes referred to as "poor man's asparagus" (although that name has also been applied to Good King Henry, Hop shoots as well as the leek).

Rock Samphire is quite common round the coasts of Southern Europe and South and South-West England, Wales and Southern Ireland, but it is less common in the North and rare in Scotland.
Samphire leaves look like succulents and are at their best and freshest in spring, until early summer, before the plant flowers.
The varnish smell and taste of the raw plant entirely disappears when rock samphire is pickled and it makes a delicious crisp green relish to eat with all cold meats and to add to salads.

The rate of accretion varies with the shelter of the site and the amount of sediment carried by the water; but by degrees the foreshores, in the upper portion and at the sides of the embanked estuary, are raised sufficiently for samphire to make its appearance, and, later on, a coarse grass.
In the intermediate stages of the process outlined above much may be done to promote the growth of accretion, or warping as it is termed, and to ensure the fertility of the reclaimed land.

Although marsh samphire grows easily and is commonly found all over Europe and North America, it is not cultivated and is only available for a short time while it is in season, normally in late summer and early autumn.
Samphire can be eaten raw but blanching it removes some of the saltiness.

Rock samphire is clearly what Willy's gatherer was after, as it grows among rocks, shingle and cliffs.
Marsh samphire on the other hand is found around estuaries where it likes to osmosise (or whatever it is plants do) trace elements.
I chose the latter with the rock samphire and was knocked out by its strong flavour of parsley and celery, (Well, doh, in my increasing madness, I'd forgotten that Crithmum is related to parsley and carrots.) The salicornia was saltier, like the Asian celery that's around these days, and a little grassy with it.

Rock Samphire commonly inhabits inaccessible ledges of sea-cliffs and its collection was an exceedingly hazardous and often lethal trade.
Rock Samphire was sometimes grown as a vegetable on well-drained soils, especially in England and France.
The succulent leaves, with a thick, translucent coat, are an adaption to drought, for even though the plant may be drenched by spray from a rough sea, the salt in the water tends to dry out an unprotected leaf and makes it difficult for roots to take up usable water.

The lower ledge can be reached by scrambling down some rock to the east (take care!), that is to the right of the cave in the centre of the picture.
Temperature and time are probably the main factors (thus rocks with chalcedony are more likely to have been associated with oil source rocks that rocks with opal).

This is one of of Hampshire's rarer plants, with few locations in Hampshire, and Gosport has a very good population.
In Gosport Rock Samphire is most frequent along the south coast at Lee-on-the-Solent, particularly since the replenishment of the beach several years ago; it is also locally frequent in the area near Gilkicker Point, and scattered around the edge of Forton creek (Lake) and up along the east coast to Hardway, and at Workhouse Lake.
It occurs along most of The Solent coast in Hampshire, and along the creeks of the north part of Portsmouth, but appears to be absent from Southampton Water.
