Rouergue was turned into a département in 1790, which was called Aveyron, after the main river flowing through it.
Rouergue included the county of Rodez, and was divided between the dioceses of Rodez and Vabres.
During the Middle Ages, Rouergue changed hands a number of times, its rulers including England (due to the Treaty of Brétigny in 1360), Armagnac, and Languedoc.

Attacked by brigands in the Rouergue country on his way to Santiago di Compostella, Adalard, Viscount of Flanders, erected in 1031 a monastery known as the Domerie d'Aubrac, a special order of priests, knights, lay brothers, ladies, and lay sisters for the care and protection of travellers.
The shrine enclosing the relics of the Saint, which in 1590 was hidden in the masonry connecting the pillars of the choir, was found in 1875, repaired, transferred to the cathedral of Rodez for a novena, and brought back to Conques, a distance of 25 miles, on the shoulders of the clergy.
Among Saints specially honoured in the Diocese of Rodez and Vabres are: S. Antoninus of Pamiers, Apostle of the Rouergue (date uncertain); S. Gratus and S. Ansutus, martyrs (fourth century); S. Naamatius, deacon and confessor (end of fifth century); Ste.

They became comtes de Toulouse et de Rouergue, and their line became extinct in 1272, with the death of Alphonse de Poitiers, brother of Louis IX, and of his wife, Jeanne, daughter of Raymond VII of Toulouse.
The lion is that of Rouergue and the bendy coat comes from the arms of Fleyre, seigneurs in 1614.

Rouergue fell under the sovereign power of the Count of Toulouse.
In order to finance his grand role of taking part in the 1st Crusade of Godefroi de Bouillon, the Count of Toulouse, Raymond de Saint Gilles in 1112 ceded his beloved Rouergue to Richard, already Viscount of Carladez, who then took over the title of Count of Rodez from Raymond de Saint Gilles.
When Raymond the VII died at Millau with no heirs in 1249, his son-in-law, Alphonse of Poitiers, the blood brother of Saint Louis moved closer to Rouergue bringing nearer the power of the Capetian.
