Sambar or sambhar (Kannada: ಸಾಮ್ಬಾರ್‍, Tamil சாம்பார் (சாம்பாறு in Sri Lanka)), pronounced "saambaar", is a dish common in South India and Sri Lanka, made of lentils (usually red gram, also called toor dal) and vegetables in a spicy tamarind and lentil flour soup base.
Sambar without lentils (but with vegetables or fish) is called Kozhambu in Tamil Nadu.
Sambar with rice is one of the main courses of both formal and everyday south Indian cuisine.

I not only chose it because it is a dish I usually like, but also because it didn't incorporate any of the chutneys or sambar that I could clearly see were repeated in the entree section of the menu.

Since the previous post was on Quick Sambar, I thought I will post another "curry" dish.
For those who dont know what sambar is, it is a curry made with lentils and vegetables.
It is generally had with rice and is one of the "evergreen" dish made in south india.

When your Rasam, sambar or Kozumbu becomes too sour, add a pinch of cooking soda (however I don't approve of it).But cooking soda spoils the taste of the dish sometimes if you are not careful.
If the dish is dry curry, it is better to remove the vegetables, wash cooked vegetables and again put back in the masala.
If the dish is having extra chillies, again remove gravy and replace as in previous suggestion and add a spoon of Ghee to the curry.
