Sashimi - Wikipedia, the free encyclopedia
The name sashimi may have come from the practice of sticking the tail of the fish on the slices, to let it be known which fish one was eating.
Sashimi is often the first course in a formal Japanese meal, but also often served as a main course with rice and Miso soup in separate bowls.
Sashimi is similar to sushi, another Japanese food, often featuring raw fish, that is commonly served at the same establishments.

Sashimi is prized not as a meal, but rather as a delectable hors d'oeuvre akin to a fine pâté or filet mignon appetizer.
Sashimi is eaten with chopsticks, being dipped into a low dish containing a specially prepared sashimi soy sauce mixture into which one should mix the light green cone of wasabi horseradish found in one's sashimi bowl.
The sashimi is then placed amongst a seaweed garnish and carefully arranged against the carcass, which still trembling, is set bowed as if it magically jumped out of the water and onto your plate.

Sushi and wine: pairing wine with sushi, sashimi, wasabi - on StarChefs
Most diners are content to wash down their sushi and sashimi with beer or (forgive them) hot sake, while urbane types hope the house offers a few good cold sakes.
The trend is most evident at innovative "new-style" Japanese restaurants working more or less under the influence of Nobu Matsuhisa, but it is also seen in the many New American and French restaurants, where wine is the beverage of choice, that offer raw fish preparations as first courses.
And last summer, the Mario Batali-Joe Bastianich team introduced an Italian answer to sashimi, called crudo, which is meant to be paired with wine, at their new restaurant, Esca, in New York.
